Why don't I see all of my Google contacts in the iPhone Contacts app?

Make sure that you are showing all of your contacts in the Contacts app, and not just some of them. To do so, open the Contacts app, press the back button to return to Lists, and select "All Contacts" or "All iCloud" as desired.
